Just checking: do you bake the puff pastry first?
I’ve made tomato pie many different ways but this version is my absolute favorite, and it all came together accidentally. If you have all of the time in the world and prefer your own homemade pie crust, go for it.)
Just prepare all the tomatoes by slicing them, salting them and laying them on paper towels while you make the pie crust. Bake the pie for 25-35 minutes, until the crust is golden and the cheese is lightly browned and bubbly. You want to eat this. Sprinkle with a little salt and let the slices drain on a paper towel for at least 20 minutes.

Use several different varieties or colors of tomatoes or mix in some cherry or grape tomatoes.
